Chocolate Orange Tart

Image
chocolate orange tart Vegan, sugar, and gluten free chocolate orange tart with a silky pour in filling and crisp date & sunflower seed base. Topped with in-season orange and coconut cream for a seriously decadent, super healthy dessert. A chocolate orange tart that’s both sugar free and gluten free! I know, I know, I’m really going crazy with chocolate and orange, but it’s just so good! I got some half blood oranges at the grocery store hoping they’d be a pretty marbled red but they’re just orange, hah. They taste great though. Although the tart is arguably healthy(ish) you’d never know it – but it means that I had some for a perfectly acceptable breakfast this morning. Maybe not the best breakfast but not the worst, either! The base is made with oats, seeds, and dates, and the filling is simple dark chocolate and coconut cream. The whole point is to let the oranges really shine, so use the nicest seasonal fruit you can find. I can see myself making this in the summer with raspberr...

BLACKBERRY CHOCOLATE CAKE + BLACKBERRY MASCARPONE FILLING

Image
BLACKBERRY CHOCOLATE CAKE + BLACKBERRY MASCARPONE FILLING Blackberry Chocolate Cake: three layers of dark chocolate cake, filled with blackberry mascarpone cream and frosted with a fudgy blackberry chocolate buttercream. It’s hard to believe, but today Flour Covered Apron officially turns one year old! When I started this blog a year ago, I wasn’t sure where exactly it would take me. I just knew that I a) needed a creative outlet for my rediscovered addiction to baking, and b) wanted to connect with a larger community of passionate bakers! I’d be lying if I didn’t acknowledge there have been a lot of ups and downs with my blog. It’s quite literally been the product of my blood, sweat, and tears over the past year, and while I’ve often felt proud & excited, there’ve also been many days where I’ve just felt like quitting. But looking back, it’s been an incredibly rewarding journey and I’ve learned much more than I ever expected to! It wasn’t all that long ago that I could never imagi...

THE BEST SUSHI OR STICKY RICE RECIPE

Image
THE BEST SUSHI OR STICKY RICE RECIPE This Sushi Rice Recipe is really sticky and slightly sweet, which makes it perfect for making your own sushi rolls or sashimi at home. This sticky rice recipe is easy to make and lasts for days in the refrigerator. I will teach you how to make sticky rice with all my tips and tricks. Don’t even think about skipping tip #3, even though you will try to….. Sushi is one of my all time favorite foods. That statement is one that is newer for me because I would have never thought I was a sushi type of gal, but I am completely obsessed with it. Now, the price of a handmade sushi roll is what keeps me from eating it as often as I would like but I’ve spent some serious time learning how to make my own at home and now I make it all the time! This sticky rice recipe is the only one I use because the seasoning is spot on and the end result is super sticky, which is a must to make the perfect sushi or sashimi roll at home. There are a couple key points fo...

Chicken Enchilada Skillet Dinner

Image
CHICKEN ENCHILA DA SKILLET DINNER: LOW CARB TEX-MEX One pan chicken enchilada skillet dinner recipe is quick, easy, and low carb. It cooks in about 15 minutes, has 7 net carbs per serving and is so good the whole family will love it! This, y’all, is the perfect weeknight meal! It’s cheesy, creamy explosions of Tex-Mex flavor in every single keto-friendly bite. Be sure to check out my giant guide to cauliflower rice techniques, too! For this recipe you’ll need: cauliflower, chicken, chicken stock, oil, tomatoes with chiles, canned whole baby corn on the cob (usually available in the Asian foods section), chili powder, cumin, garlic powder, Mexican oregano (or regular oregano), Mexican blend cheese, cilantro This was one of my most satisfying adaptions ever. I mean, I’ve made low carb chicken enchilada casserole before but honestly the lack of corn tortillas and corn flavor kind of left me frustrated. It was like biting into a beautiful chocolate cake and finding out it was carob – n...

Cheesy Zucchini Casserole

Image
CHEESY ZUCCHINI CASSEROLE – KETO RECIPE You’re going to love this easy zucchini casserole! Deliciously cheesy, low in carbs and keto friendly, this zucchini bake makes a wonderful summer side dish that even the kids will love. A great way to use up that bounty of summer squash. You have to laugh, because this zucchini casserole recipe was born of absolute necessity. The necessity of having too much zucchini and not enough ideas of what to do with it! My fellow gardeners, does this happen to you too? Right around this time every year, I start drowning in the long green summer squash. Every year, I have one monster plant that produces and produces and produces. And beside it is a smaller plant that produces and produces and produces. Within the past 2 days, I have harvest 7 large zucchini and I am passing them out to strangers on the street. I am not kidding. Sometimes I leave a box of them on the street corner and by late afternoon, they are all gone. Things grow big here in Oregon. It’...

PINK LEMONADE VODKA SLUSH

Image
PINK LEMONADE VODKA SLUSH It only takes 3 ingredients to make this easy Pink Lemonade Vodka Slush! This Midwestern classic is great for the holidays, showers, and cocktail parties! Watch the video below to see how easy it is! When I was growing up, this is the Vodka Slush my mom always made. I remember it from neighborhood block parties, bridal showers, Christmas, and that one time we threw a surprise party for my dad. (How old did he turn that year, Mom? I have no idea! I just remember I was equally surprised!) One piece of “special equipment” is required, though. You need a 1-gallon ice cream pail Let me tell you how easy this Pink Lemonade Vodka Slush is to make. First, eat all the ice cream in your ice cream pail. (Just kidding! I’m sure you already did that!) Combine pink lemonade concentrate (the frozen kind, but thawed) with 2 cups of vodka and a 2-liter bottle of your favorite citrus soda. I love 50/50 (if I can find it), Squirt, or even Sprite. Stir and freeze. Then, just ...

Salisbury Meatballs and Mashed Potatoes

Image
Salisbury Meatballs and Mashed Potatoes How many of you love to go to IKEA? I could count quite a number of hands!! Whenever I visit IKEA, I can’t help feeling that I see more people in the restaurant than the furniture department. Seriously guys, how many of you, in reality go to IKEA not to buy furniture but to eat the meatballs? I have to admit that the Meatballs at IKEA are good enough and the gravy is good too, but these meatballs below are WAY better than those from IKEA.↓ I may sound biased here, but truthfully these Salisbury Meatballs and Mashed Potatoes were yummy and the gravy was SO delish! Well, at times you just can’t beat homemade stuff right? Talking about home-made, I have been on a roll recently. Cooking almost every single day and the house smells delightful and I’ve probably pushed some of my neighbors nuts already. I have been posting a lot of food pictures on Facebook too. I question how many people would have already blocked me by now. ???? These meatballs used r...

Sweet and Spicy Sriracha Baked Chicken Wings

Image
Sweet and Spicy Sriracha Baked Chicken Wings Every year I try to challenge myself in the kitchen by cooking at least one thing a month that takes me completely out of my comfort zone. For the record, cookies are comfort zone… muffins and scones are my safe place… chewy blondies and rich chocolate brownies feel as safe a fuzzy blanket, and plates of pasta are always a blinking neon “HAPPY” sign… So what get’s me anxious behind the countertop? MEAT. Not all meat; I can cook a juicy burger or Sicilian Braciole without breaking a sweat. It’s mainly meat that needs prep. You know… the butchering, to put it delicately. It makes me cringe and clam up and want to run very very fast in the other direction. I’m a wimp like that. Hands-down my favorite appetizer to order when we dine out is sticky, spicy, saucy chicken wings. They’re such a treat because they’re something I never ever ever make at home. Or I should say, up until last week I never ever made at home. February was all about the chic...
